Skinny Style Food: Meatballs!!

This really is one of my favourite foods. I LOVE making it for the people I love because I know not only is it yummy its a lot healthier than the normal meatballs you get. 

This one takes a bit more time than some of my previous recipe posts but believe me it's well worth it :)

What you will need:

The Meatballs: 

- 2 x egg whites

- salt and pepper to taste

- 1/4 mug of breadcrumbs (Dried) Go for brown bread here if you wan to slightly healthier.

- Your favourite pasta or traditional spaghetti (amount for the people you have over - see packets for info)

- 1/4 pounds of sausage (remove the cases and crumble the meat with your fingertips or you can ask a butcher to do it for you)

- Cheese for serving

The Sauce:

- 1/4 mug of red wine

- 1/4 mug of basil (the fresher the better + chop it up) 

- 1 teaspoon of oregano (chop it up and throw it in a bowl with the basil)

- 3 chopped cloves of garlic (the smaller the better)

- 1 rather large onion (cut up into little chunks)

- 2 teaspoons of Olive Oil

- 2 big peppers ( cup up into slightly bigger chunks than the onion)

- about 5 big tomatoes (cut up the same as the peppers)

- 1 can / tube of tomato paste (try and get the low/no salt one)

- 1 jar of marinara sauce (try and get the low/no salt one)

- 1/2 teaspoon of red pepper (crush it all up)

The How To:

1) The sauce: Heat the oil in a large pot on a medium to high heat. Throw in the onions and peppers and cook for about 10 minutes or until they are soft/tender. Add the garlic and cook for a bit longer, maybe 5 minutes but keep moving it about to stop any burning. 

2) Add the tomato and all the sauce ingredients you have left, mix it all together and bring back up to the boil for about a minute. Then reduce down to a nice simmer and cook for about 25-30 minutes. 

3) Turn on the top part of your oven. It's call a broiler setting (which is basically heating from the top) and its only the top element in the oven that heats up (look at the little pictures on the oven, it's definitely there!)
Set up your oven shelves so that the one you'll be cooking on is about about 4 inches away from the flame.

4) For the meatballs: Stir together all the meat, egg whites, salt and pepper and breadcrumbs in a big bowl and keep going until its all combined. 

5) Wet your hands and get ready to get messy! Grab some of the mixture and roll together in your hands to make meatballs and place onto a baking sheet once you are happy with the size. Remember the bigger you go the more cooking time so be reasonable! 

6) Put the baking tray on the top shelf (as we set it up earlier) and cook for 2-4 minutes until browned on all sides. Keep checking on them and turning to make sure its evenly tanned.

7) Add the meatballs to the sauce, cover them up and simmer for about another 30 minutes. I usually make a cup of tea and have a natter with the family in the kitchen during this time :) 

8) Cook the pasta / Spaghetti now and drain.

9) To Serve: Dish it all up and throw on some cheese for those who want it.
